CHOOSING A CAVIAR
Osetra is the most versatile: hazelnut, long on the palate, it suits a first encounter as well as a table of connoisseurs. Beluga is rarer, larger-grained, more delicate. Sevruga is more marked, more iodised. Baerii is the most approachable, and an excellent introduction.
If you hesitate, start with the smallest format: it costs less to try, and you will know.
HOW MUCH PER PERSON
Thirty grams per person as an appetiser, fifty as a starter, and more if caviar is the centre of the meal rather than an accompaniment.
STORING IT
Between 0 and 4 °C, in the coldest part of the refrigerator, and never in the freezer. An unopened tin keeps until the date shown on it. Once opened, it should be eaten within two or three days.
SERVING IT
Take the tin out fifteen minutes beforehand. Serve on a bed of ice, with a mother-of-pearl spoon: metal alters the taste. Nothing else is required, and anything strong will only mask it.
THE COLD CHAIN
Our couriers carry an insulated box, and shipments travel under controlled temperature. If your parcel arrives and the cold seems to have been broken, tell us within forty-eight hours from the order itself: that claim reaches us directly.
